Place the 2 cups basmati rice in a large mixing bowl and cover with 3 cups cold water. Gently swirl and rub the grains with your fingers, then carefully pour off the cloudy water. Repeat 3–4 times until the water runs mostly clear. This removes excess surface starch, which is the #1 key to fluffy, separated grains.

After the final rinse, cover the 2 cups basmati rice with fresh cold water and let it soak for 15–30 minutes. Soaking hydrates the grains evenly so they cook through without the outside becoming mushy. Drain completely through a sieve before cooking.

Add the drained basmati rice, 3 cups of cold water, and 1 tsp kosher salt to a medium saucepan. If using 1 tbsp unsalted butter, add it now. Stir once gently to combine. Do not stir again after this point.

Once boiling, immediately reduce the heat to the lowest setting possible and place a tight-fitting lid on the pot. If your lid has a steam vent, cover it with a folded kitchen towel before placing it on the pot to trap all the steam inside. Cook for exactly 12 minutes. Do not lift the lid.
