This removes excess surface starch, which is the #1 key to fluffy, separated grains.

After the final rinse, cover the 2 cups arroz basmati enjuagado y remojado with fresh 3 cups agua fría and let it soak for 15–30 minutes. Soaking hydrates the grains evenly so they cook through without the outside becoming mushy. Drain completely through a Sieve before cooking.

Once boiling, immediately reduce the heat to the lowest setting possible and place a tight-fitting lid on the Pot. If your lid has a steam vent, cover it with a folded Kitchen Towel before placing it on the pot to trap all the steam inside. Cook for exactly 12 minutes. Do not lift the lid.

After 12 minutes, turn off the heat completely. Leave the Pot on the burner, lid still on, and let the 2 cups arroz basmati enjuagado y remojado steam undisturbed for 10 minutes. This resting step is essential — it finishes cooking the grains gently and allows moisture to redistribute evenly.
