One Pan Lemon Orzo

  • 2 tbsp olive oil
  • 1 medium yellow onion finely diced
  • 4 cloves garlic minced
  • 1.5 cup orzo pasta dry
  • 3.5 cup vegetable broth low-sodium
  • 2 whole lemon 1 zested and both juiced (about 1/4 cup juice)
  • 2 cup baby spinach roughly chopped
  • 0.75 cup parmesan cheese freshly grated
  • 2 tbsp unsalted butter
  • 0.5 tsp kosher salt plus more
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp fresh parsley finely chopped
  • 0.25 tsp red pepper flakes

Instructions

  1. Heat the @[Olive Oil] in a large #[Skillet] over ^[medium heat]. Add the diced @[Yellow Onion] and cook, stirring occasionally, for ~[4–5 minutes] until softened and translucent. Add the @[Garlic] minced and cook for another ~[30 seconds] until fragrant.
  2. Add the dry @[Orzo Pasta] to the pan and stir to coat it in the @[Olive Oil]. Toast for ~[1–2 minutes], stirring frequently, until the @[Orzo Pasta] is lightly golden and smells nutty.
  3. Pour in the @[Vegetable Broth] and bring to a boil.
