
One Pan Lemon Orzo
This viral one-pan lemon orzo is the weeknight dinner everyone's been making — creamy, bright, and endlessly satisfying. 2 tbsp olive oil
1 medium yellow onion finely diced
4 cloves garlic minced
1.5 cup orzo pasta dry
3.5 cup vegetable broth low-sodium
2 whole lemon 1 zested and both juiced (about 1/4 cup juice)
2 cup baby spinach roughly chopped
0.75 cup parmesan cheese freshly grated
2 tbsp unsalted butter
0.5 tsp kosher salt plus more
0.25 tsp black pepper freshly ground
2 tbsp fresh parsley finely chopped
0.25 tsp red pepper flakes

Instructions
- Heat the @[Olive Oil] in a large #[Skillet] over ^[medium heat]. Add the diced @[Yellow Onion] and cook, stirring occasionally, for ~[4–5 minutes] until softened and translucent. Add the @[Garlic] minced and cook for another ~[30 seconds] until fragrant.
- Add the dry @[Orzo Pasta] to the pan and stir to coat it in the @[Olive Oil]. Toast for ~[1–2 minutes], stirring frequently, until the @[Orzo Pasta] is lightly golden and smells nutty.
- Pour in the @[Vegetable Broth] and bring to a boil. Reduce heat to ^[medium-low] and simmer uncovered, stirring every couple of minutes, for ~[10–12 minutes] until the @[Orzo Pasta] is al dente and most of the liquid has been absorbed.
