Heat the 3 tbsp coconut oil in a large pot over medium heat. Add the diced yellow onion and cook, stirring occasionally, for 5–6 minutes until softened and lightly golden. Add the minced garlic and grated fresh ginger grated and cook for another 1–2 minutes until fragrant.

Add all the spices — 1 ½ tsp ground cumin, 1 ½ tsp curry powder, ½ tsp ground turmeric, 1 tsp smoked paprika, ¼ tsp cayenne pepper adjust (if using), ½ tsp salt, and ½ tsp black pepper — directly to the pot. Stir constantly for about 60 seconds to toast the spices in the 3 tbsp coconut oil, coating the 1 yellow onion mixture evenly.

Pour in the diced diced tomatoes (with their juices), 1 can coconut milk, rinsed 1 ½ cups red lentils, and 2 ½ cups vegetable broth. Stir everything together and bring to a boil over medium-high heat.

Reduce the heat to medium-low and simmer uncovered for 20–25 minutes, stirring occasionally, until the 1 ½ cups red lentils are completely soft and the curry has thickened to your liking. If it gets too thick, add a splash of vegetable broth or water.

Stir in the fresh fresh spinach roughly chopped and 2 tbsp lemon juice. Cook for another 2 minutes until the 2 cups fresh spinach roughly chopped is wilted. Taste and adjust seasoning with more ½ tsp salt, ½ tsp black pepper, or 2 tbsp lemon juice as needed.
