Instructions

  1. Bring a large #[Pot] of generously salted water to a boil. Cook the @[Spaghetti] according to package directions until al dente. Before draining, scoop out at least ~[1 cup] of the starchy @[Pasta Cooking Water] and set aside. Drain the @[Spaghetti].
  2. While the @[Spaghetti] cooks, heat @[Olive Oil] and ~[2 tablespoons] of @[Butter] in a large #[Skillet] over ^[medium heat]. Add the @[Minced Garlic] and @[Red Pepper Flakes] (if using) and sauté for ~[1–2 minutes], stirring constantly, until fragrant and just golden — don't let it burn.
  3. Add the drained @[Spaghetti] directly to the #[Skillet]. Add the remaining ~[2 tablespoons] of @[Butter] and pour in ~[½ cup] of the reserved @[Pasta Cooking Water]. Toss everything together over ^[medium heat] for ~[1–2 minutes] until the @[Butter] melts and a light, silky sauce forms. Add more @[Pasta Cooking Water] a splash at a time if needed to loosen.
  4. Remove the #[Skillet] from heat and stir in the grated @[Parmesan Cheese], tossing quickly so it melts into a creamy coating rather than clumping. Season with @[Salt] and freshly ground @[Black Pepper] to taste.
  5. Divide into bowls and top with extra @[Parmesan Cheese], a crack of @[Black Pepper], and @[Fresh Parsley] if desired. Serve immediately while hot and saucy.
