Bring a large pot of salt for pasta water to a boil. Cook the 12 oz spaghetti according to package directions until al dente. Before draining, scoop out at least 1 cup of the starchy 1 cup pasta cooking water and set aside. Drain the 12 oz spaghetti.

While the 12 oz spaghetti cooks, heat 2 tbsp olive oil extra-virgin and 2 tablespoons of unsalted butter in a large skillet over medium heat. Add the 5 cloves garlic and ½ tsp red pepper flakes adjust (if using) and sauté for 1–2 minutes, stirring constantly, until fragrant and just golden — don't let it burn.

Add the drained spaghetti directly to the skillet. Add the remaining 2 tablespoons of unsalted butter and pour in ½ cup of the reserved 1 cup pasta cooking water. Toss everything together over medium heat for 1–2 minutes until the 4 tbsp unsalted butter melts and a light, silky sauce forms. Add more 1 cup pasta cooking water a splash at a time if needed to loosen.

Remove the skillet from heat and stir in the grated freshly grated parmesan cheese, tossing quickly so it melts into a creamy coating rather than clumping. Season with 1 tsp salt for pasta water and freshly ground ½ tsp black pepper to taste.
