In a medium mixing bowl, combine the 1 ½ lb boneless skinless chicken thighs pieces with 1 tablespoon 1 tbsp soy sauce, 1 teaspoon 1 tsp cornstarch, and 1 teaspoon 1 tsp sesame oil. Toss well to coat and let marinate at room temperature for 10–15 minutes while you prep the remaining ingredients.
