1 lb ground beef 80/20 blend recommended
0.5 lb ground pork
0.5 cup almond flour finely ground, not almond meal
0.5 cup Parmesan cheese freshly grated
2 large eggs
4 cloves garlic minced
1.5 tsp Italian seasoning
0.5 tsp fennel seeds lightly crushed
1 tsp salt
0.5 tsp black pepper freshly ground
2 tbsp fresh parsley finely chopped
1 tbsp olive oil for drizzling

Instructions
- Preheat your #[Oven] to ![400°F]. Line a large #[Baking Sheet] with #[Parchment Paper] and set aside.
- In a large #[Mixing Bowl], combine the @[Ground Beef], @[Ground Pork], @[Almond Flour], @[Parmesan Cheese], @[Eggs], @[Garlic], @[Italian Seasoning], @[Fennel Seeds] (if using), @[Salt], @[Black Pepper], and @[Fresh Parsley]. Mix with your hands or a fork until just combined — do not overmix or the meatballs will be tough.
- Using a cookie scoop or your hands, roll the mixture into balls about 1.5 inches in diameter (roughly 2 tablespoons each). You should get about 20–22 meatballs. Place them evenly spaced on the prepared #[Baking Sheet] and drizzle lightly with @[Olive Oil].
- Bake in the preheated #[Oven] for ~[18–22 minutes], until the meatballs are golden brown on the outside and cooked through. An #[Meat Thermometer] inserted into the center should read %[165°F].
