  • 2 lb ground beef 80/20 for best flavor
  • 1 medium yellow onion diced
  • 1 medium green bell pepper diced
  • 4 cloves garlic minced
  • 1 can crushed tomatoes
  • 1 can diced tomatoes with juices
  • 2 tbsp tomato paste
  • 1 cup beef broth low-sodium
  • 2 tbsp chili powder
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper adjust
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper freshly ground
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 tbsp fresh cilantro chopped

Instructions

  1. Heat a large #[Pot] or #[Dutch Oven] over ^[medium-high heat]. Add the @[Ground Beef] and cook, breaking it up with a #[Wooden Spoon], until browned and no longer pink, about ~[7–8 minutes]. Drain excess fat if desired, leaving about 1 tablespoon in the pot for flavor.
  2. Reduce heat to ^[medium]. Add the diced @[Yellow Onion] and @[Green Bell Pepper] to the pot and cook, stirring occasionally, until softened, about ~[5 minutes]. Add the @[Garlic] and cook for ~[1 more minute] until fragrant.
