In a small mixing bowl, whisk together the ¼ cup extra-virgin olive oil, 3 tbsp fresh lemon juice, 1 tbsp red wine vinegar, 2 cloves garlic pressed or minced minced, 1 tsp Dijon mustard, ½ tsp fine sea salt, and ¼ tsp freshly ground black pepper until fully emulsified. Taste and adjust seasoning — add more 3 tbsp fresh lemon juice for brightness or a pinch more ½ tsp fine sea salt if needed. Set aside.

Remove the outer leaves from the 1 whole iceberg lettuce outer leaves removed head and rinse under cold water. Pat dry thoroughly with paper towels — this is key for keeping the salad crisp. Cut the head into 8 wedges or roughly chop into large, bite-sized chunks and arrange on a serving platters (Large) or in a wide mixing bowl.

Scatter the halved 1 cup cherry tomatoes, 1 medium English cucumber half-moons, and thinly sliced small red onion evenly over the lettuce. Sprinkle the crumbled ¾ cup feta cheese and chopped fresh flat-leaf parsley roughly chopped on top. If using, add the toasted 3 tbsp toasted sunflower seeds for extra crunch.
