Pat the 4 pieces bone-in completely dry with paper towels. In a mixing bowl, combine 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp kosher salt, and ½ tsp black pepper. Rub the spice mixture all over the chicken on both sides, pressing it in to adhere.

Heat the 1 tbsp neutral oil such as avocado in a large cast iron skillet or heavy-bottomed skillet over medium-high heat until shimmering. Place the 4 pieces bone-in skin-side down and press gently with a spatula for the first 2 minutes. Sear undisturbed for 10–12 minutes until the skin is deeply golden and crispy. Flip and cook for another 10–12 minutes until the internal temperature reaches 165°F. Transfer to a plate and tent loosely with aluminum foil.

Carefully pour off all but about 1 tbsp of drippings from the skillet. Reduce heat to medium-low and add the minced garlic, cooking for 30 seconds until fragrant. Add the ⅓ cup honey, 3 tbsp hot sauce, 1 tbsp apple cider vinegar, and ¼ tsp red pepper flakes or more. Whisk together and let the glaze simmer for 2–3 minutes, stirring frequently, until slightly thickened. Remove from heat and stir in the 2 tbsp unsalted butter until melted and glossy.
