Instructions

  1. Pat the @[Chicken Thighs] completely dry with paper towels. In a small bowl, combine @[Garlic Powder], @[Onion Powder], @[Smoked Paprika], @[Kosher Salt], and @[Black Pepper]. Rub the spice mixture all over the chicken on both sides, pressing it in to adhere.
  2. Heat the @[Avocado Oil] in a large #[Cast Iron Skillet] or heavy-bottomed #[Skillet] over ^[medium-high heat] until shimmering. Place the @[Chicken Thighs] skin-side down and press gently with a #[Spatula] for the first ~[2 minutes]. Sear undisturbed for ~[10–12 minutes] until the skin is deeply golden and crispy. Flip and cook for another ~[10–12 minutes] until the internal temperature reaches %[165°F]. Transfer to a plate and tent loosely with #[Aluminum Foil].
  3. Carefully pour off all but about 1 tablespoon of drippings from the #[Skillet]. Reduce heat to ^[medium-low] and add the minced @[Garlic], cooking for ~[30 seconds] until fragrant.
