Preheat your oven to 375°F. Generously spray a 8 large eggs muffin tin with cooking spray (or use silicone liners) and set aside.

Heat a skillet over medium heat. Add the crumbled ½ lb turkey breakfast sausage and cook, breaking it up with a spatula, for 4–5 minutes until browned and cooked through. Add the diced yellow onion, ½ cup red bell pepper, and 2 cloves garlic, and cook for another 2–3 minutes until softened. Stir in the chopped baby spinach and cook for 1 minute until wilted. Remove from heat and let cool slightly.

In a large mixing bowl, whisk together the 8 large eggs, ½ cup cottage cheese full-fat or 2%, ¼ cup milk whole or 2%, ½ tsp fine sea salt, ¼ tsp black pepper, and ½ tsp smoked paprika until well combined and slightly frothy. Stir in the shredded ½ cup shredded cheddar cheese and the cooked sausage-vegetable mixture.

Evenly divide the egg mixture among the 12 prepared muffin tin cups, filling each about three-quarters full. Give the pan a gentle tap on the counter to settle the mixture.
