Instructions

  1. In a #[Mixing Bowl], whisk together ~[2 tablespoons] of @[Olive Oil], the @[Minced Garlic], @[Lemon Juice], @[Dried Oregano], @[Cumin], @[Salt], and @[Black Pepper]. Add the @[Chicken Thighs] and toss to coat thoroughly. Let marinate at room temperature for ~[at least 10 minutes] while you prep the other components (or refrigerate ~[up to 4 hours] for deeper flavor).
  2. Grate half the @[English Cucumber] on the large holes of a #[Grater], then squeeze out as much moisture as possible with your hands or a #[Damp Kitchen Towel]. In a #[Mixing Bowl], stir together the @[Greek Yogurt], grated @[English Cucumber], @[Minced Garlic], @[Lemon Juice], @[Fresh Dill], and a pinch @[Salt]. Taste and adjust seasoning. Refrigerate until ready to serve.
  3. In a large #[Mixing Bowl], combine the diced @[English Cucumber], chopped @[Roma Tomatoes], sliced @[Red Onion], and halved @[Kalamata Olives]. Drizzle with ~[1 tablespoon] @[Olive Oil] and ~[1 tablespoon] @[Red Wine Vinegar], season lightly with @[Salt] and @[Black Pepper], and toss to combine. Sprinkle the crumbled @[Feta Cheese] on top. Set aside.
  4. Heat the remaining ~[1 tablespoon] of @[Olive Oil] in a large #[Skillet] over ^[medium-high heat] until shimmering. Add the marinated @[Chicken Thighs] in a single layer and cook undisturbed for ~[5–6 minutes] until deeply golden on the bottom. Flip and cook another ~[4–5 minutes] until cooked through (%[internal temperature of 165°F]). Transfer to a #[Cutting Board], rest for ~[3 minutes], then slice or chop into bite-sized pieces.
  5. Divide the cooked @[Long-Grain White Rice] evenly among 4 bowls. Top each with a portion of sliced @[Chicken Thighs] and a generous scoop of the Greek salad. Drizzle with tzatziki and serve immediately with lemon wedges on the side if desired.
