In a small mixing bowl, whisk together the tamari, 1 tbsp rice vinegar, honey, 1 tsp sesame oil, cornstarch, and ¼ tsp red pepper flakes (if using) until the cornstarch is fully dissolved. Set aside.

Pat the 1 ¼ lb large shrimp peeled and deveined dry with paper towel — this helps them sear rather than steam. Heat 1 tbsp of avocado oil in a wok or large skillet over high heat until shimmering. Add the 1 ¼ lb large shrimp peeled and deveined in a single layer and cook undisturbed for 1–1.5 minutes per side until pink and just opaque. Transfer to a plate and set aside.

Add the remaining 1 tbsp of oil to the same wok over high heat. Add the 2 cups broccoli florets first and stir-fry for 2 minutes. Add the 1 medium red bell pepper and 1 medium zucchini halved lengthwise and sliced into half-moons and continue stir-frying for another 2–3 minutes until the vegetables are crisp-tender with a little char.
