Remove 2 pieces ribeye or New York strip steak from the refrigerator 30 minutes before cooking to bring them to room temperature — this ensures even cooking. Pat both sides completely dry with paper towels, then season generously on all sides with 1 tsp kosher salt and freshly ground ½ tsp black pepper.

In a small mixing bowl, mix together the softened unsalted butter, minced garlic, 1 tbsp fresh rosemary finely chopped, 1 tbsp fresh thyme, 1 tbsp fresh flat-leaf parsley finely chopped, and a pinch of kosher salt until well combined. Set aside at room temperature.

Heat a cast iron skillet over high heat until it begins to smoke, about 2–3 minutes. Add the 1 tbsp olive oil and swirl to coat. As it melts and foams, tilt the pan slightly and use a spoon to continuously baste the 2 pieces ribeye or New York strip steak with the 4 tbsp unsalted butter for 1–2 minutes. For medium-rare, the internal temperature should reach 130–135°F.
