Instructions

Pat the 1 ½ lb large shrimp peeled and deveined completely dry with paper towels — this is the key to a good sear. Season evenly with ¾ tsp kosher salt and ¼ tsp black pepper on both sides.

Uses

  • Shrimp
  • Salt
  • Black Pepper
  • 1–2 min
  • Medium-high

Heat a large skillet over medium-high heat. Add the 1 tbsp olive oil and 2 tablespoons of the unsalted butter. Once the 4 tbsp unsalted butter is melted and foaming, add the 1 ½ lb large shrimp peeled and deveined in a single layer. Cook undisturbed for 1–2 minutes until pink and lightly golden on the bottom, then flip and cook another 1 minute. Transfer the 1 ½ lb large shrimp peeled and deveined to a plate and set aside.

Uses

  • Olive Oil
  • Unsalted Butter

  • Medium

Reduce the heat to medium. Add the remaining 2 tablespoons of unsalted butter to the same skillet. Once melted, add the 6 cloves garlic (and ½ tsp red pepper flakes if using) and sauté for about 1 minute, stirring constantly, until fragrant and just golden — don't let it burn. Pour in the ⅓ cup dry white wine and 2 tbsp fresh lemon juice, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2–3 minutes until slightly reduced.

Uses

  • Unsalted Butter
  • Garlic
  • Red Pepper Flakes
  • White Wine
  • Lemon Juice
  • 1 min

Return the 1 ½ lb large shrimp peeled and deveined to the skillet and toss to coat in the 6 cloves garlic 4 tbsp unsalted butter sauce. Cook for 1 more minute just to warm through. Taste and adjust seasoning with ¾ tsp kosher salt and ¼ tsp black pepper. Remove from heat, scatter fresh fresh flat-leaf parsley finely chopped over the top, and serve immediately with 2 tbsp fresh lemon juice wedges on the side.
