In a large mixing bowl, whisk together the all-purpose flour, sea salt, and paprika. Make a well in the center and pour in the extra-virgin olive oil and warm water. Mix with a wooden spoon until a shaggy dough forms, then turn out onto a lightly floured surface and knead for 3–4 minutes until smooth and pliable. Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and rest at room temperature for 20 minutes.

Heat the extra-virgin olive oil in a large skillet over ^[medium heat]. Add the sliced yellow onion and cook, stirring occasionally, for 12–15 minutes until softened and lightly golden.
