Bring a large pot of generously salted water to a boil. Add the 12 oz ditalini pasta and cook according to package directions until al dente, about 8–10 minutes. Drain in a colander and rinse under cold running water until completely cool. Shake off excess water and set aside.

In a small mixing bowl, whisk together the ¼ cup extra-virgin olive oil, 3 tbsp lemon juice freshly squeezed, 1 tbsp red wine vinegar, minced garlic pressed or minced, 1 tsp dried oregano, 1 tbsp salt for pasta water, and 1 pinch freshly ground black pepper until well combined and slightly emulsified. Taste and adjust seasoning as needed.

In a large mixing bowl, combine the cooled 12 oz ditalini pasta, diced medium red bell pepper, 1 medium cucumber seeded and diced, ½ cup red onion, ½ cup celery thinly sliced, ¾ cup cherry tomatoes, and ½ cup kalamata olives. Pour the vinaigrette over the top and toss well to coat every piece of pasta and vegetable.

Fold in the crumbled ½ cup feta cheese and chopped fresh flat-leaf parsley roughly chopped. Cover the mixing bowl and refrigerate for at least 10 minutes (or up to overnight) to let the flavors meld. Give it a good stir before serving and add a squeeze of fresh lemon juice freshly squeezed if it needs brightening.
