Dairy-Free Pancakes

  • 0.5 tsp fine salt
  • 1 tbsp granulated sugar
  • 1.25 cup unsweetened almond milk or any non-dairy milk such as oat or soy

Instructions

  1. In a large #[Mixing Bowl], whisk together the @[All-Purpose Flour], @[Baking Powder], @[Fine Salt], and @[Granulated Sugar] until evenly combined.
  2. In a separate small #[Mixing Bowl], whisk together the @[Unsweetened Almond Milk], @[Eggs], melted @[Coconut Oil], @[Maple Syrup], and @[Vanilla Extract] until smooth and well combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a whisk or #[Spatula] until just combined — a few small lumps are fine. Do not overmix or the pancakes will be tough. Let the batter rest for ~[3–5 minutes] while you heat the pan.
