  • 240 min

In a large mixing bowl, combine the 3 lb bone-in goat meat cut into 2-inch chunks with 2 tbsp of Jamaican curry powder, 1 tsp ground allspice, 1 tsp kosher salt, ½ tsp black pepper, 1 whole Scotch bonnet pepper seeded and minced, 4 cloves garlic, and 1 tbsp fresh ginger grated. Toss thoroughly until every piece is well coated. Cover and refrigerate for at least 4 hours, or ideally overnight.

  • Scotch Bonnet Pepper
  • 3–4 min
  • Medium-high

Heat the 3 tbsp neutral oil such as vegetable in a large Dutch oven over medium-high heat. Working in batches to avoid crowding, add the marinated 3 lb bone-in goat meat cut into 2-inch chunks pieces and sear for 3–4 minutes per side until deeply browned. Transfer the browned pieces to a plate and set aside.

Reduce the heat to medium. In the same pot, add the diced large yellow onion and 3 stalks scallions and cook, stirring, for 3–4 minutes until softened. Add the remaining 1 tbsp of Jamaican curry powder and the 1 tbsp tomato paste, stirring constantly for 1–2 minutes until the curry is fragrant and the paste darkens slightly.

Return the browned 3 lb bone-in goat meat cut into 2-inch chunks to the pot along with any resting juices. Pour in the 2 cups chicken broth and add the 2 whole fresh thyme sprigs sprigs. Stir to combine, then bring to a boil. Reduce the heat to low, cover tightly, and simmer for 1 hour and 15 minutes, stirring occasionally.

Uses

  • Goat Meat
  • Chicken Broth
  • Thyme
  • 25–30 min

Add the 2 medium russet potatoes chunks to the pot, stir gently, and continue to simmer covered for another 25–30 minutes, until the potatoes are tender and the 3 lb bone-in goat meat cut into 2-inch chunks is fall-off-the-bone soft. Remove the 2 whole fresh thyme sprigs sprigs. Taste and adjust 1 tsp kosher salt and ½ tsp black pepper as needed. If the gravy is too thin, simmer uncovered for 10 more minutes to reduce.

Uses

  • Russet Potato
  • Goat Meat
  • Thyme
  • Salt
  • Black Pepper

Ladle the curry 3 lb bone-in goat meat cut into 2-inch chunks into deep bowls or onto plates. Serve hot alongside Jamaican rice and peas, roti, or steamed white rice. Garnish with extra sliced scallions if desired.
