Melt the 4 tbsp unsalted butter in a saucepan over medium heat. Add the finely minced medium yellow onion and cook, stirring often, for 4–5 minutes until softened and translucent but not browned. Add the ½ cup all-purpose flour all at once and stir constantly with a wooden spoon or whisk for 2 minutes to cook out the raw flour taste — the mixture will look like a thick paste.

Gradually pour in the 2 ½ cups whole milk, a splash at a time, whisking vigorously after each addition to prevent lumps.
