Drain and rinse the 1 can black beans and 1 can black-eyed peas in a colander under cold water. Shake off excess water and set aside. Drain the 1 can whole kernel corn and the 1 can diced tomatoes with green chiles thoroughly — press the tomatoes gently with a spoon to remove extra liquid so the dip doesn't get watery.

Uses

  • Colander
  • Black Bean
  • Black-Eyed Peas
  • Corn Kernels
  • Tomato
  • Green Bell Pepper

In a small mixing bowl, whisk together the ⅓ cup olive oil, ⅓ cup red wine vinegar, 3 tbsp lime juice freshly squeezed, 1 tbsp granulated sugar, 1 tsp garlic powder, 1 tsp ground cumin, ½ tsp chili powder, ¾ tsp kosher salt, and ¼ tsp black pepper until the sugar and salt are fully dissolved and the dressing is emulsified. Taste and adjust — it should be bright, tangy, and slightly sweet. Set aside.

Finely dice the 1 red bell pepper and 1 green bell pepper, ½ red onion, and 1 jalapeño seeded and finely minced. For a milder dip, remove all seeds and ribs from the 1 jalapeño seeded and finely minced. For more heat, leave some seeds in. Roughly chop the ½ cup fresh cilantro roughly chopped.

Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes before serving — this rest time is key. The flavors meld and deepen significantly as it chills. It tastes even better after 2–4 hours, or overnight.

Uses

  • Plastic Wrap

If using 1 avocado diced, dice it just before serving and gently fold it in. Taste one more time for seasoning, then transfer to a serving mixing bowl. Serve with plenty of bag tortilla chips for scooping.
