Drain and rinse the 1 lata de frijoles negros enjuagados y escurridos and 1 lata de guisantes de ojo negro enjuagados y escurridos in a colander under cold water. Shake off excess water and set aside. In a small mixing bowl, whisk together the ⅓ taza de aceite de oliva, ⅓ taza de vinagre tinto, 3 tbsp jugo de lima recién exprimido, 1 tbsp azúcar granulada, 1 tsp ajo en polvo, 1 tsp comino, ½ tsp polvo de chile, ¾ tsp sal kosher, and ¼ tsp pimienta negra until the sugar and salt are fully dissolved and the dressing is emulsified. Taste and adjust — it should be bright, tangy, and slightly sweet. Set aside.

Finely dice the 1 pimiento morrón rojo and 1 pimiento morrón verde, ½ cebolla roja, and 1 jalapeño sin semillas y finamente picado. For a milder dip, remove all seeds and ribs from the 1 jalapeño sin semillas y finamente picado. For more heat, leave some seeds in. Roughly chop the ½ taza de cilantro fresco toscamente picado.

Add the diced pimiento morrón rojo, 1 pimiento morrón verde, ½ cebolla roja, 1 jalapeño sin semillas y finamente picado, and ½ taza de cilantro fresco toscamente picado.

Pour the dressing over the bean and vegetable mixture. Stir gently with a spatula until everything is evenly coated. Taste and adjust ¾ tsp sal kosher, 3 tbsp jugo de lima recién exprimido, or 1 tbsp azúcar granulada as needed.
