  • 1 tbsp fresh ginger grated
  • 1 can diced tomatoes
  • 1 can full-fat coconut milk shaken before opening
  • 2 can chickpeas rinsed and drained
  • 2 cup fresh spinach roughly chopped
  • 1 tbsp fresh lemon juice
  • 1.5 tsp ground cumin
  • 1.5 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 0.5 tsp cayenne pepper adjust
  • 0.75 tsp fine salt plus more
  • 2 cup basmati rice cooked according to package directions
  • fresh cilantro roughly chopped, for garnish

Instructions
