Place the thawed 1 package frozen chopped spinach in a clean kitchen towel or several layers of paper towels and squeeze out as much liquid as possible — this step is critical. You want the 1 package frozen chopped spinach as dry as you can get it so the dip isn't watery.

Melt the 1 tbsp butter in a small skillet over medium heat. Add the diced yellow onion finely diced and cook, stirring occasionally, for 4–5 minutes until softened and translucent. Add the 3 cloves garlic minced and cook for another 60 seconds until fragrant. Remove from heat and set aside to cool slightly.

In a large mixing bowl, beat the softened cream cheese with a hand mixer (or a sturdy spatula) until smooth and lump-free, about 1–2 minutes. This ensures a creamy, uniform dip.

Add the 1 cup sour cream, ½ cup mayonnaise, 1 tbsp fresh lemon juice, ½ tsp onion powder, ¼ tsp garlic powder, ½ tsp kosher salt, ¼ tsp black pepper freshly ground, and ¼ tsp crushed red pepper flakes (if using) to the 8 oz cream cheese. Mix until fully combined and smooth.

Fold in the sautéed ½ yellow onion finely diced and 3 cloves garlic minced, the squeezed-dry 1 package frozen chopped spinach, ¾ cup of the shredded mozzarella cheese, and all of the grated Parmesan cheese freshly grated preferred. Stir until everything is evenly distributed. Taste and adjust ½ tsp kosher salt and ¼ tsp black pepper freshly ground as needed.

Transfer the mixture to a 1 quart baking dish (or a hollowed-out 1 whole sourdough bread boule for serving set on a baking sheet). Spread it into an even layer and sprinkle the remaining ¼ cup of shredded mozzarella cheese over the top.
