Melt the 1 tbsp mantequilla in a small skillet over medium heat. Add the diced cebolla amarilla and cook, stirring occasionally, for 4–5 minutes until softened and translucent. Add the 3 dientes ajo and cook for another 60 seconds until fragrant. Remove from heat and set aside to cool slightly.

In a large mixing bowl, beat the softened queso crema with a hand mixer (or a sturdy spatula) until smooth and lump-free, about 1–2 minutes. This ensures a creamy, uniform dip.

Add the 1 cup crema agria, ½ cup mayonesa, 1 tbsp jugo de limón fresco, ½ tsp polvo de cebolla, ¼ tsp polvo de ajo, ½ tsp sal kosher, ¼ tsp pimienta negra, and ¼ tsp copos de pimienta roja (if using) to the 8 oz queso crema. Mix until fully combined and smooth.

Fold in the sautéed ½ cebolla amarilla and 3 dientes ajo, the squeezed-dry 1 paquete espinacas congeladas picadas descongeladas, ¾ cup of the queso mozzarella, and all of the queso Parmesano. Stir until everything is evenly distributed. Taste and adjust ½ tsp sal kosher and ¼ tsp pimienta negra as needed.

Transfer the mixture to a 1 quart baking dish (or a hollowed-out 1 whole pan de masa madre para servir set on a baking sheet). Spread it into an even layer and sprinkle the remaining ¼ cup of queso mozzarella over the top.
