  • 350°F

Preheat your oven to 350°F. Place the thawed 1 package frozen chopped spinach in a clean kitchen towel or several layers of paper towels and squeeze out as much liquid as possible — this step is critical. You want the 1 package frozen chopped spinach as dry as you can get it so the dip isn't watery.

Uses

  • Oven
  • Kitchen Towel
  • Paper Towels
  • Spinach
  • 4–5 min
  • Medium

Melt the 1 tbsp butter in a small skillet over medium heat. Add the diced yellow onion and cook, stirring occasionally, for 4–5 minutes until softened and translucent. Add the 3 cloves garlic and cook for another 60 seconds until fragrant. Remove from heat and set aside to cool slightly.

Uses

  • Skillet
  • Butter
  • Yellow Onion
  • Garlic
  • 1–2 min

In a large mixing bowl, beat the softened cream cheese with a hand mixer (or a sturdy spatula) until smooth and lump-free, about 1–2 minutes. This ensures a creamy, uniform dip.

Uses

  • Mixing Bowl
  • Hand Mixer
  • Spatula
  • Cream Cheese

Add the 1 cup sour cream, ½ cup mayonnaise, 1 tbsp fresh lemon juice, ½ tsp onion powder, ¼ tsp garlic powder, ½ tsp kosher salt, ¼ tsp black pepper, and ¼ tsp crushed red pepper flakes (if using) to the 8 oz cream cheese. Mix until fully combined and smooth.

Uses

  • Sour Cream
  • Mayonnaise
  • Lemon Juice
  • Onion Powder
  • Garlic Powder
  • Salt

Fold in the sautéed ½ yellow onion and 3 cloves garlic, the squeezed-dry 1 package frozen chopped spinach, ¾ cup of the shredded mozzarella cheese, and all of the grated Parmesan cheese. Stir until everything is evenly distributed. Taste and adjust ½ tsp kosher salt and ¼ tsp black pepper as needed.

Uses

  • Yellow Onion
  • Garlic
  • Spinach
  • Mozzarella Cheese
  • Parmesan Cheese
  • Salt

Transfer the mixture to a 1 quart baking dish (or a hollowed-out 1 whole sourdough bread boule for serving set on a baking sheet). Spread it into an even layer and sprinkle the remaining ¼ cup of shredded mozzarella cheese over the top.

Uses

  • Baking Dish
  • Baking Sheet
  • Sourdough Bread
  • Mozzarella Cheese
  • 20–25 min
  • 350°F

Bake at 350°F for 20–25 minutes, until the dip is hot and bubbling around the edges and the 8 oz cream cheese on top is melted and lightly golden. For extra color, broil for the last 1–2 minutes.

Uses

  • Cream Cheese
  • 5 min

Remove from the oven and let rest for 5 minutes before serving. Serve warm with 1 package crackers or pita chips, 1 package of pita chips, sliced baguette, or fresh vegetables like celery, carrots, and bell pepper strips.
