Preheat your oven to 325°F. Grease a 9x5-inch loaf pan (or a 9-inch round cake pan) generously with ½ cup neutral oil such as vegetable or cooking spray, then line the bottom with a strip of parchment paper. This cake can stick, so don't skip this step.

In a large mixing bowl, whisk together the 3 cups all-purpose flour, 1 ½ tsp baking powder, 1 tsp baking soda, ½ tsp fine salt, 2 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp ground allspice until evenly combined. Set aside.

In a separate large mixing bowl or a large measuring cups, whisk together the 1 cup honey good quality, cooled ¾ cup strong brewed coffee, ½ cup neutral oil such as vegetable, ¾ cup granulated sugar, and ¼ cup until the sugars are mostly dissolved and the mixture is smooth.

Add the 3 eggs large one at a time to the 1 cup honey good quality mixture, whisking well after each addition. Stir in the 1 tsp pure vanilla extract, 2 tbsp fresh orange juice, and 1 tsp orange zest from about half an orange (if using).

Pour the wet ingredients into the dry ingredients. Using a whisk or spatula, gently fold and stir until just combined and no dry streaks remain. The batter will be thin — this is normal and is what gives the cake its moist, tender texture. Do not overmix.

Pour the batter into the prepared loaf pan. If using sliced sliced almonds, scatter them evenly over the top of the batter.

Remove from the oven and let the cake cool in the loaf pan for 15 minutes. Then run a thin knife around the edges, invert onto a wire rack, and peel off the parchment paper. Flip it right-side up to finish cooling.
