Preheat your Oven to 325°F. Grease a 9x5-inch Loaf Pan (or a 9-inch round Cake Pan) generously with Neutral Oil or Cooking Spray, then line the bottom with a strip of Parchment Paper. This cake can stick, so don't skip this step.

In a large Mixing Bowl, whisk together the All-Purpose Flour, Baking Powder, Baking Soda, Fine Salt, Cinnamon, Ginger, Allspice until evenly combined. Set aside.

In a separate large Mixing Bowl or a large Measuring Cups, whisk together the Honey, cooled Coffee, Neutral Oil, Granulated Sugar, and Dark Brown Sugar until the sugars are mostly dissolved and the mixture is smooth.

Add the Eggs one at a time to the Honey mixture, whisking well after each addition. Stir in the Pure Vanilla Extract, Orange Juice, and Orange Zest (if using).

Pour the wet ingredients into the dry ingredients. Using a Whisk or Spatula, gently fold and stir until just combined and no dry streaks remain. The batter will be thin — this is normal and is what gives the cake its moist, tender texture. Do not overmix.

Pour the batter into the prepared Loaf Pan. If using sliced Almonds, scatter them evenly over the top of the batter.

Bake at 325°F for 45–55 minutes, until a toothpick or skewer inserted into the center comes out clean with just a few moist crumbs. The top should be deep golden brown and spring back lightly when pressed. Start checking at 45 minutes — Oven temperatures vary.

Remove from the Oven and let the cake cool in the Loaf Pan for 15 minutes. Then run a thin Knife around the edges, invert onto a Wire Rack, and peel off the Parchment Paper. Flip it right-side up to finish cooling.
