  • 325°F

Preheat your oven to 325°F. Grease a 9x5-inch loaf pan (or a 9-inch round cake pan) generously with ½ cup neutral oil such as vegetable or cooking spray, then line the bottom with a strip of parchment paper. This cake can stick, so don't skip this step.

In a large mixing bowl, whisk together the 3 cups all-purpose flour, 1 ½ tsp baking powder, 1 tsp baking soda, ½ tsp fine salt, 2 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp ground allspice until evenly combined. Set aside.

Pour the wet ingredients into the dry ingredients. Using a whisk or spatula, gently fold and stir until just combined and no dry streaks remain. The batter will be thin — this is normal and is what gives the cake its moist, tender texture. Do not overmix.

Pour the batter into the prepared loaf pan. If using sliced sliced almonds, scatter them evenly over the top of the batter.

Bake at 325°F for 45–55 minutes, until a toothpick or bamboo skewer inserted into the center comes out clean with just a few moist crumbs. The top should be deep golden brown and spring back lightly when pressed. Start checking at 45 minutesoven temperatures vary.

Remove from the oven and let the cake cool in the loaf pan for 15 minutes. Then run a thin knife around the edges, invert onto a wire rack, and peel off the parchment paper. Flip it right-side up to finish cooling.

Once the cake is just slightly warm, drizzle lightly with a little extra 1 cup honey for a beautiful sheen and an extra hit of sweetness. Slice and serve. This cake is even better the next day once the flavors have deepened.
