Instrucciones
- 1
Preheat your Oven to ![325°F]. Grease a 9x5-inch Loaf Pan (or a 9-inch round Cake Pan) generously with Neutral Oil or Cooking Spray, then line the bottom with a strip of Parchment Paper. This cake can stick, so don't skip this step.
- 2
In a large Mixing Bowl, whisk together the All-Purpose Flour, Baking Powder, Baking Soda, Fine Salt, Cinnamon, Ginger, Allspice until evenly combined. Set aside.
- 3
In a separate large Mixing Bowl or a large Measuring Cups, whisk together the Honey, cooled Coffee, Neutral Oil, Granulated Sugar, and Dark Brown Sugar until the sugars are mostly dissolved and the mixture is smooth.
- 4
Add the Eggs one at a time to the Honey mixture, whisking well after each addition. Stir in the Pure Vanilla Extract, Orange Juice, and Orange Zest (if using).
- 5
Pour the wet ingredients into the dry ingredients. Using a Whisk or Spatula, gently fold and stir until just combined and no dry streaks remain. The batter will be thin — this is normal and is what gives the cake its moist, tender texture. Do not overmix.
- 6
Pour the batter into the prepared Loaf Pan. If using sliced Almonds, scatter them evenly over the top of the batter.
- 7
Bake at ![325°F] for 45–55 minutes, until a toothpick or skewer inserted into the center comes out clean with just a few moist crumbs. The top should be deep golden brown and spring back lightly when pressed. Start checking at 45 minutes — oven temperatures vary.
- 8
Remove from the Oven and let the cake cool in the Loaf Pan for 15 minutes. Then run a thin Knife around the edges, invert onto a Wire Rack, and peel off the Parchment Paper. Flip it right-side up to finish cooling.
- 9
Once the cake is just slightly warm, drizzle lightly with a little extra Honey for a beautiful sheen and an extra hit of sweetness. Slice and serve. This cake is even better the next day once the flavors have deepened.
