Rinse the 1 cup long-grain white rice jasmine in a sieve under cold running water, stirring with your hand, until the water runs mostly clear — about 30 seconds. This removes excess starch. Drain well.

In a pot or Dutch oven, combine the rinsed 1 cup long-grain white rice jasmine, 8 cups chicken broth low-sodium preferred, 2 cups water, 1 inch fresh ginger peeled and sliced into 3–4 coins coins, and smashed 2 cloves garlic smashed. Stir to combine and bring to a boil over high heat.

Once boiling, reduce the heat to low and stir the pot well, scraping the bottom to prevent sticking. Cover with the lid slightly ajar (to allow steam to escape) and simmer, stirring every 10–15 minutes, for 45–60 minutes. The 1 cup long-grain white rice jasmine should fully break down into a thick, creamy porridge. If it thickens too much, add 2 cups water a splash at a time to reach your preferred consistency.

While the congee cooks, prepare your toppings: slice the 2 stalks green onions thinly sliced, julienne the 1 inch fresh ginger peeled and sliced into 3–4 coins (if using), soft-boil or poach any 4 eggs soft-boiled or poached, and set all toppings out in small mixing bowl for serving.

When the congee is done, remove and discard the 1 inch fresh ginger peeled and sliced into 3–4 coins coins and 2 cloves garlic smashed cloves. Stir in the 1 tsp sesame oil, 1 tsp salt, and ¼ tsp white pepper. Taste and adjust seasoning — it should be savory and well-seasoned on its own.

Ladle the congee into bowls and top with 2 stalks green onions thinly sliced, a drizzle of soy sauce, and any optional toppings you like: julienned 1 inch fresh ginger peeled and sliced into 3–4 coins, 2 tbsp fried shallots store-bought or homemade, 2 tbsp fresh cilantro roughly chopped, a soft-boiled 4 eggs soft-boiled or poached, or a swirl of chili oil. Serve immediately.
