Rinse the 1 cup arroz blanco de grano largo jazmín in a sieve under cold running water, stirring with your hand, until the water runs mostly clear — about 30 seconds. This removes excess starch. Drain well.

In a pot or Dutch oven, combine the rinsed 1 cup arroz blanco de grano largo jazmín, 8 cups caldo de pollo bajo en sodio preferido, 2 cups agua, 1 inch jengibre fresco coins, and smashed 2 cloves ajo aplastado. Stir to combine and bring to a boil over high heat.

Once boiling, reduce the heat to low and stir the pot well, scraping the bottom to prevent sticking. Cover with the lid slightly ajar (to allow steam to escape) and simmer, stirring every 10–15 minutes, for 45–60 minutes. The 1 cup arroz blanco de grano largo jazmín should fully break down into a thick, creamy porridge. If it thickens too much, add 2 cups agua a splash at a time to reach your preferred consistency.

While the congee cooks, prepare your toppings: slice the 2 stalks cebolletas, julienne the 1 inch jengibre fresco (if using), soft-boil or poach any 4 eggs cocidos suavemente o escalfados, and set all toppings out in small mixing bowl for serving.

When the congee is done, remove and discard the 1 inch jengibre fresco coins and 2 cloves ajo aplastado cloves. Stir in the 1 tsp aceite de sésamo, 1 tsp sal, and ¼ tsp pimienta blanca. Taste and adjust seasoning — it should be savory and well-seasoned on its own.

Ladle the congee into bowls and top with 2 stalks cebolletas, a drizzle of salsa de soja, and any optional toppings you like: julienned 1 inch jengibre fresco, 2 tbsp chalotes fritos, 2 tbsp cilantro fresco picado aproximadamente, a soft-boiled 4 eggs cocidos suavemente o escalfados, or a swirl of aceite de chile. Serve immediately.
