Pat the 2 lb salmon fillet skin-on dry thoroughly with paper towels — this helps the glaze stick and promotes even cooking. Place the 2 lb salmon fillet skin-on skin-side down on the prepared baking sheet.

In a small mixing bowl, whisk together the melted unsalted butter, 3 cloves garlic minced, 2 tbsp fresh lemon juice, 1 tsp lemon zest, 1 tsp Dijon mustard, and 1 tsp honey until well combined.

In a separate small mixing bowl, mix together the ¾ tsp kosher salt, ½ tsp black pepper, ½ tsp smoked paprika smoked, and 1 tsp dried Italian seasoning or dried dill. Sprinkle the spice blend evenly over the top and sides of the salmon fillet skin-on.

Spoon or brush the 3 tbsp unsalted butter-3 cloves garlic glaze generously over the entire top surface of the salmon fillet skin-on, letting it pool slightly around the edges.

If using 1 tsp lemon zest slices for garnish, tuck them around and on top of the salmon fillet skin-on now. Bake in the preheated oven for 12–15 minutes, depending on the thickness of your fillet. As a rule of thumb, allow about 4–6 minutes per half-inch of thickness.

The 2 lb salmon fillet skin-on is done when it flakes easily with a fork and the thickest part reads 125–130°F on an meat thermometer for medium (slightly translucent in the center) or 145°F for fully cooked. The flesh should have turned from deep pink to a lighter, opaque color on the outside.
