Pat the 2 lb salmon fillet skin-on dry thoroughly with paper towels — this helps the glaze stick and promotes even cooking. Place the 2 lb salmon fillet skin-on skin-side down on the prepared baking sheet.

In a small mixing bowl, whisk together the melted unsalted butter, 3 cloves garlic minced minced, 2 tbsp fresh lemon juice about 1 lemon, 1 tsp lemon zest, 1 tsp Dijon mustard, and 1 tsp honey until well combined.

In a separate small mixing bowl, mix together the ¾ tsp kosher salt, ½ tsp black pepper freshly ground, ½ tsp smoked paprika smoked, and 1 tsp dried Italian seasoning or dried dill. Sprinkle the spice blend evenly over the top and sides of the salmon fillet skin-on.

Spoon or brush the 3 tbsp unsalted butter-3 cloves garlic minced glaze generously over the entire top surface of the salmon fillet skin-on, letting it pool slightly around the edges.
