Instructions

  1. Heat the @[Coconut Oil] in a large #[Skillet] over ^[medium heat]. Add the diced @[Yellow Onion] and cook, stirring occasionally, for ~[5–6 minutes] until softened and lightly golden. Add the minced @[Garlic] and grated @[Ginger] and cook for another ~[1–2 minutes] until fragrant.
  2. Add the ground @[Cumin], @[Coriander], @[Turmeric], @[Garam Masala], @[Cayenne Pepper] (if using), and @[Salt] directly to the pan. Stir constantly for ~[about 60 seconds] to toast the spices in the @[Coconut Oil] — this blooms their flavor and is key to a deep, aromatic curry.
  3. Pour in the @[Crushed Tomatoes] and stir well to combine with the spiced @[Yellow Onion] base. Simmer for ~[4–5 minutes], stirring occasionally, until the sauce thickens slightly and the @[Tomatoes] deepen in color.
  4. Add the drained @[Chickpeas] and @[Coconut Milk]. Stir everything together, bring to a gentle simmer, and cook uncovered for ~[10–12 minutes], stirring occasionally, until the sauce has thickened to your liking and the @[Chickpeas] are heated through.
  5. Stir in the fresh @[Spinach] and @[Lemon Juice]. Cook for ~[1–2 minutes] until the @[Spinach] is just wilted. Taste and adjust @[Salt] or @[Lemon Juice] as needed.
  6. Serve hot over steamed basmati rice or with warm naan bread. Garnish with fresh @[Cilantro] if desired.
