1.5 lb boneless skinless chicken breasts- 1 can fire-roasted diced tomatoes
1 can black beans drained and rinsed
1 can whole kernel corn drained
4 cup low-sodium chicken broth
1 medium yellow onion diced
3 cloves garlic minced
1 can enchilada sauce
2 tsp chili powder
1 tsp ground cumin
0.5 tsp smoked paprika
0.5 tsp salt plus more

6 whole corn tortillas cut into thin strips
2 tbsp olive oil

Instructions
- Add the diced @[Medium Yellow Onion], minced @[Garlic], @[Fire-Roasted Diced Tomatoes], @[Black Beans Drained], @[Kernel Corn], @[Enchilada Sauce], and @[Low-Sodium Chicken Broth] to the #[Slow Cooker]. Stir in the @[Chili Powder], @[Cumin], @[Smoked Paprika], and @[Salt] until well combined.
- Nestle the @[Chicken Breasts] into the liquid, making sure they are mostly submerged. Place the lid on the #[Slow Cooker] and cook on ^[LOW] for ~[6–7 hours] or on ^[HIGH] for ~[3–4 hours], until the @[Chicken Breasts] is cooked through and very tender.
