This classic version stays true to tradition: bone-in chicken for rich flavor, a fragrant ginger-onion base, and the signature slight bitterness of malunggay balanced by the mellow sweetness of green papaya.   • 2 lb bone-in chicken pieces thighs, drumsticks, or a mix — skin-on preferred for flavor
  • 1 green papaya peeled, seeded, and cut into 1-inch wedges or chunks (about 2 cups)
  • 2 cup malunggay (moringa) leaves fresh, stems removed; substitute with baby spinach if unavailable
  • 1 yellow onion sliced into thin half-moons
  • 6 cloves garlic minced or crushed
  • 1 piece fresh ginger about 2-inch knob, peeled and cut into thin coins or matchsticks
  • 2 tbsp fish sauce patis; plus more at the table
  • 6 cup water or low-sodium chicken broth for deeper flavor
  • 1 tsp whole black peppercorns
  • 1 tsp salt
  • 2 cup baby spinach use if malunggay is unavailable
  • 4 cup steamed white rice for serving

Instructions

  1. Pat the @[Chicken Pieces] dry with paper towels. This helps them brown better and gives the broth more flavor.
