Chicken and Spice Rub

  • 1.5 lb boneless skinless chicken breasts pounded to even thickness
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.75 tsp salt
  • 0.25 tsp black pepper freshly ground

Cilantro-Lime Rice

  • 1.5 cup long-grain white rice rinsed
  • 3 cup water
  • 2 tbsp fresh lime juice from about 1 lime
  • 0.25 cup fresh cilantro chopped
  • 0.5 tsp salt

Black Beans

  • 1 can black beans drained and rinsed
  • 0.5 tsp ground cumin
  • 0.25 tsp garlic powder

Pico de Gallo

  • 3 medium roma tomatoes diced
  • 0.5 medium white onion finely diced
  • 1 whole jalapeño seeded and minced
  • 2 tbsp fresh lime juice
  • 2 tbsp fresh cilantro chopped
  • 0.25 tsp salt

Main

  • 2 whole ripe avocados sliced or diced
  • 1 cup corn kernels fresh, frozen (thawed), or charred
  • 1 whole lime cut into wedges, for serving

Instructions

  1. In a small #[Mixing Bowl], combine the @[Chili Powder], @[Cumin], @[Paprika], @[Garlic Powder], @[Onion Powder], @[Salt], and @[Black Pepper]. Coat the @[Chicken Breasts] on all sides with @[Olive Oil], then rub the spice mixture evenly over each piece. Let the @[Chicken Breasts] marinate at room temperature for ~[10 minutes] while you prepare the other components.
  2. Combine the rinsed @[Long-Grain White Rice], @[Water], and @[Salt] in a medium #[Saucepan]. Bring to a boil ^[over high heat], then reduce to a ^[low simmer], cover, and cook for ~[15–18 minutes] until the @[Water] is absorbed and the @[Rice] is tender. Remove from heat, fluff with a fork, then stir in the @[Lime Juice] and chopped @[Cilantro]. Cover and keep warm.
