  • 4 whole large flour tortillas 8-inch size
  • 1 cup shredded cheddar cheese freshly shredded for best melt
  • 1 cup shredded Monterey Jack cheese freshly shredded for best melt
  • 1 tbsp unsalted butter divided, softened
  • 0.25 tsp garlic powder
  • 0.5 cup sour cream
  • 0.5 cup salsa mild or medium
  • 1 whole avocado sliced or mashed
  • 2 tbsp fresh cilantro roughly chopped

Instructions

  1. In a small #[Mixing Bowl], combine the shredded @[Cheddar Cheese] and @[Monterey Jack Cheese] and toss together. If using @[Garlic Powder], sprinkle it into the cheese blend and mix.
  2. Heat a large #[Skillet] over ^[medium heat]. Add about ¼ teaspoon of @[Butter] and let it melt, swirling to coat the pan. Place one @[Flour Tortillas] in the skillet. Sprinkle half of the cheese blend evenly over one half of the tortilla, then fold the other half over to create a half-moon shape. Press down gently with a #[Spatula].
  3. Cook for ~[2–3 minutes] until the bottom is golden and crispy, then carefully flip and cook the other side for another ~[2 minutes] until golden and the @[Cheddar Cheese] is fully melted. Transfer to a #[Cutting Board] and repeat with the remaining @[Flour Tortillas] and cheese, adding a little @[Butter] to the pan between each.
  4. Let each quesadilla rest for ~[1 minute] before cutting into 3 wedges with a sharp #[Knife] or pizza cutter. Serve immediately with @[Sour Cream], @[Salsa], and @[Avocado] on the side.
