
Cauliflower Rice Stir Fry

A satisfying keto-friendly stir fry that swaps traditional rice for riced cauliflower, loaded with colorful vegetables, scrambled eggs, and a savory soy-sesame sauce. Ready in under 30 minutes and packed with flavor — you won't miss the carbs.

Rice the cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains, about 10–15 pulses. Alternatively, use a grater. Spread on a clean kitchen towel and press out as much moisture as possible — this is key to getting a stir-fry texture rather than steamed mush.

Mix the sauce: In a small mixing bowl, stir together the soy sauce (or soy sauce), rice vinegar, and white pepper. Set aside.

Scramble the eggs: Heat 1 tablespoon of sesame oil in a large wok or skillet over ^[medium-high heat]. Add the beaten eggs and scramble until just set, about 1–2 minutes. Transfer to a plate and set aside.
