Main

  • 1.5 lb boneless skinless chicken breast cut into 1-inch pieces
  • 1 cup roasted cashews unsalted
  • 1 medium red bell pepper cut into 1-inch pieces
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 3 stalks green onions sliced, white and green parts separated
  • 2 tbsp vegetable oil divided
  • 1 tbsp cornstarch for coating chicken

Sauce

  • 3 tbsp soy sauce low-sodium preferred
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil toasted
  • 1 tbsp brown sugar packed
  • 1 tsp cornstarch for thickening sauce
  • 0.25 cup chicken broth low-sodium

Instructions

  1. In a small #[Mixing Bowl], whisk together the @[Soy Sauce], @[Hoisin Sauce], @[Rice Vinegar], @[Sesame Oil], @[Brown Sugar], @[Cornstarch], and @[Chicken Broth] until smooth. Set aside.
  2. Place the @[Chicken Breast] pieces in a #[Mixing Bowl] and toss with 1 tablespoon of @[Cornstarch] until evenly coated. This helps the chicken develop a light crust and keeps it tender during stir frying.
  3. Heat 1 tablespoon of @[Vegetable Oil] in a #[Wok] or #[Skillet] over ^[high heat] until shimmering. Add the @[Chicken Breast] in a single layer and cook undisturbed for ~[2–3 minutes] until golden on the bottom, then stir and cook another ~[2–3 minutes] until cooked through.
