Toast the ⅓ cup unsweetened shredded coconut toasted: Add the ⅓ cup unsweetened shredded coconut toasted to a dry skillet over medium heat. Stir frequently for 2–3 minutes until golden and fragrant. Remove from heat and set aside to cool.

Make the dressing: In a small mixing bowl, whisk together the 3 tbsp fresh lime juice, 2 tbsp mayonnaise, 2 tbsp coconut milk, 1 tbsp honey, 1 tbsp apple cider vinegar, ½ tsp allspice, ¼ tsp salt, and 1 pinch black pepper until smooth and well combined. Taste and adjust seasoning as needed.
