Main

  • 1.5 lb sweet potatoes peeled and cut into 3/4-inch cubes
  • 1 can chickpeas drained, rinsed, and patted very dry
  • 3 tbsp extra-virgin olive oil divided
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp fine sea salt divided
  • 1 cup quinoa rinsed
  • 1 medium avocado pitted and sliced
  • 1 cup shredded red cabbage

Tahini Dressing

  • 3 tbsp tahini well stirred
  • 2 tbsp fresh lemon juice from about 1 lemon
  • 1 clove garlic pressed or finely minced
  • 3 tbsp warm water plus more to thin
  • 1 pinch fine sea salt

Instructions

  1. Preheat your #[Oven] to ![425°F]. Line a large #[Baking Sheet] (or two) with #[Parchment Paper]. Spread the cubed @[Sweet Potatoes] on one side and the dried @[Chickpeas] on the other. Drizzle the @[Sweet Potatoes] with 2 tablespoons of @[Extra-Virgin Olive Oil] and the @[Chickpeas] with 1 tablespoon. Sprinkle the @[Smoked Paprika], @[Garlic Powder], and @[Fine Sea Salt] evenly over both. Toss each side separately to coat well, then spread everything into a single layer.
  2. Roast for ~[30–35 minutes], flipping the @[Sweet Potatoes] and shaking the @[Chickpeas] halfway through, until the @[Sweet Potatoes] are tender and caramelized at the edges and the @[Chickpeas] are golden and crispy. Remove from the #[Oven] and set aside.
  3. While the vegetables roast, combine the rinsed @[Quinoa] and vegetable broth in a medium #[Saucepan]. Bring to a boil over ^[medium-high heat], then reduce to a ^[low simmer], cover, and cook for ~[15 minutes] until all the liquid is absorbed. Remove from heat and let it steam, covered, for ~[5 more minutes]. Fluff with a fork and season lightly with @[Fine Sea Salt].
  4. In a small #[Mixing Bowl], whisk together the @[Tahini], @[Lemon Juice], maple syrup, minced @[Garlic], and a pinch of @[Fine Sea Salt]. Add the @[Warm Water] one tablespoon at a time, whisking until the dressing is smooth and pourable. Taste and adjust @[Lemon Juice] or @[Fine Sea Salt] as needed.
  5. Divide the @[Quinoa] among four bowls. Arrange a handful of greens, a portion of roasted @[Sweet Potatoes], crispy @[Chickpeas], sliced @[Avocado], and shredded @[Red Cabbage] in each bowl.
