  • 6–8 min
  • Medium

Melt the 4 tbsp unsalted butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced medium yellow onion and 2 stalks celery and cook, stirring occasionally, for 6–8 minutes until softened and translucent. Add the 3 cloves garlic and cook for 1 more minute until fragrant.

Uses

  • Dutch Oven
  • Pot
  • Unsalted Butter
  • Yellow Onion
  • Celery
  • Garlic
  • 15–18 min
  • Medium-low

Add the 4 cups broccoli florets, 4 cups chicken broth, ½ tsp smoked paprika, ¾ tsp kosher salt, and ½ tsp black pepper. Stir to combine. Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 15–18 minutes, until the 4 cups broccoli florets is very tender and easily pierced with a fork.

Uses

  • Broccoli
  • Chicken Broth
  • Smoked Paprika
  • Salt
  • Black Pepper

Use an immersion blender to partially blend the soup — pulse a few times to break down most of the broccoli florets while leaving some small chunks for texture. Alternatively, transfer about half the soup to a blender, blend until smooth, and stir it back into the pot.

Remove the pot from heat. Add the shredded 3 cups sharp cheddar cheese in two or three handfuls, stirring well between each addition until fully melted and smooth. Taste and adjust ¾ tsp kosher salt and ½ tsp black pepper as needed.

  • Sharp Cheddar Cheese
  • Salt
  • Black Pepper

Ladle into bowls and top with extra shredded 3 cups sharp cheddar cheese and fresh fresh chives thinly sliced if desired. Serve immediately.
