Preheat your oven to 425°F. Line a large rimmed baking sheet (18×13-inch) with aluminum foil or parchment paper for easy cleanup. In a large mixing bowl, toss the cubed 1 ½ lb Yukon Gold potatoes with 2 tablespoons of olive oil, 1 tsp smoked paprika, ½ tsp garlic powder, ¾ tsp kosher salt, and ¼ tsp black pepper until evenly coated. Spread in a single layer on the baking sheet.

Remove the baking sheet from the oven and add the sliced smoked sausage, diced whole red bell pepper diced, 1 whole green bell pepper diced, 1 medium yellow onion, and minced garlic. Drizzle with the remaining 1 tablespoon of olive oil and toss everything together directly on the baking sheet. Spread back into an even layer.
