Instructions

  1. Heat the @[Extra-Virgin Olive Oil] in a #[Skillet] over ^[medium heat]. Add the diced @[Small Yellow Onion] and cook, stirring occasionally, for ~[4–5 minutes] until softened and translucent. Add the @[Minced Garlic], @[Cumin], @[Smoked Paprika], and @[Red Pepper Flakes] (if using), and stir for ~[about 1 minute] until fragrant.
  2. Add the rinsed @[Black Beans] to the #[Skillet] along with ~[3–4 tablespoons] of the reserved bean liquid (or water). Stir to combine and season with @[Fine Sea Salt]. Simmer over ^[medium-low heat] for ~[6–8 minutes], stirring occasionally, until the beans are heated through and the liquid has reduced to a saucy consistency. Use the back of a spoon to lightly mash about a quarter of the beans — this helps the filling hold together in the tacos.
  3. Remove the #[Skillet] from heat. Stir in the @[Lime Juice] and chopped @[Cilantro]. Taste and adjust @[Fine Sea Salt] as needed.
  4. Warm the @[Corn Tortillas] directly over a gas burner flame for ~[20–30 seconds] per side until lightly charred, or wrap them in a damp paper towel and #[Microwave] for ~[30–45 seconds] until pliable.
  5. Assemble the tacos: spoon a generous portion of the @[Black Beans] filling onto each @[Corn Tortilla]. Top with sliced or mashed @[Avocado], @[Jalapeño] slices, crumbled @[Cotija Cheese], and a drizzle of @[Hot Sauce]. Serve immediately with extra @[Lime] wedges on the side.
