If using frozen 2 cups mixed berries fresh or frozen, let them thaw for 10 minutes so they blend more easily. If using fresh strawberries, hull and halve them first.

Add the 2 cups mixed berries fresh or frozen, 1 cup plain Greek yogurt full-fat for creamiest results, ¼ cup honey, 2 tbsp fresh lemon juice from about 1 lemon, and ½ tsp pure vanilla extract (if using) to a blender. Blend on high until completely smooth, about 45–60 seconds.

Taste the mixture and adjust sweetness — add more ¼ cup honey if needed, or a little more 2 tbsp fresh lemon juice from about 1 lemon for extra tang. If the mixture is very thick, add 1–2 tablespoons of whole milk or water and blend briefly to combine.

For an ultra-smooth texture (especially with raspberries or blackberries), pour the blended mixture through a fine mesh sieve over a mixing bowl, pressing with a spatula to push through the liquid and leave the seeds behind.

Carefully pour the 2 cups mixed berries fresh or frozen mixture into popsicle molds, filling each cavity to about 1/4 inch from the top to allow for slight expansion as they freeze.

Gently tap the molds on the counter a few times to release any air bubbles and settle the mixture.

Insert popsicle sticks into each mold. If your molds don't have a lid to hold the sticks upright, freeze for 30–45 minutes first until the mixture is slushy, then insert the sticks — they'll stand straight on their own.

Freeze for a minimum of 4 hours, or overnight, until completely solid.

  • 1–1 min

To unmold, run warm (not hot) water over the outside of the molds for 10–15 seconds until the popsicles release easily. Gently wiggle and pull the stick to slide them out. Serve immediately or wrap individually in plastic wrap and return to the freezer.
