Instrucciones
- 1
If using frozen Mixed Berries, let them thaw for 10 minutes so they blend more easily. If using fresh strawberries, hull and halve them first.
- 2
Add the Mixed Berries, Greek Yogurt, Honey, Lemon Juice, and Vanilla Extract (if using) to a Blender. Blend on high until completely smooth, about 45–60 seconds.
- 3
Taste the mixture and adjust sweetness — add more Honey if needed, or a little more Lemon Juice for extra tang. If the mixture is very thick, add 1–2 tablespoons of Milk or water and blend briefly to combine.
- 4
For an ultra-smooth texture (especially with raspberries or blackberries), pour the blended mixture through a fine mesh Sieve over a Mixing Bowl, pressing with a Spatula to push through the liquid and leave the seeds behind.
- 5
Carefully pour the Mixed Berries mixture into popsicle molds, filling each cavity to about 1/4 inch from the top to allow for slight expansion as they freeze.
- 6
Gently tap the molds on the counter a few times to release any air bubbles and settle the mixture.
- 7
Insert popsicle sticks into each mold. If your molds don't have a lid to hold the sticks upright, freeze for 30–45 minutes first until the mixture is slushy, then insert the sticks — they'll stand straight on their own.
- 8
Freeze for a minimum of 4 hours, or overnight, until completely solid.
- 9
To unmold, run warm (not hot) water over the outside of the molds for 10–15 seconds until the popsicles release easily. Gently wiggle and pull the stick to slide them out. Serve immediately or wrap individually in Plastic Wrap and return to the freezer.
