
Baked Cod

Tender, flaky baked cod with a golden, herb-seasoned crust — ready in under 30 minutes and simple enough for any weeknight. A light drizzle of olive oil and a squeeze of fresh lemon bring the whole dish together beautifully.

Preheat your oven to ![400°F]. Lightly grease a baking dish with a little extra-virgin olive oil. Pat the cod fillets completely dry with paper towel — this helps them bake rather than steam.

In a small mixing bowl, whisk together the extra-virgin olive oil, garlic minced, lemon zest, smoked paprika, dried oregano, fine sea salt, black pepper, and red pepper flakes (if using). Spoon and spread this mixture evenly over the top of each cod fillet.

Arrange the seasoned fillets in the prepared baking dish. Lay a few lemon rounds around and on top of the fish. Bake uncovered for 15–18 minutes, until the fish is opaque throughout and flakes easily with a fork. Thicker fillets may need the full 18 minutes.

Remove from the oven and let rest for 2 minutes. Scatter fresh parsley over the top and serve immediately with extra lemon wedges on the side.
