1.5 lb cod fillets about 4 fillets, patted dry
3 tbsp extra-virgin olive oil
3 cloves garlic minced
1 whole lemon zested and sliced into rounds
1 tsp smoked paprika
0.5 tsp dried oregano
0.5 tsp fine sea salt
0.25 tsp freshly ground black pepper
0.25 tsp red pepper flakes
2 tbsp fresh parsley finely chopped

Instructions
- Preheat your #[Oven] to ![400°F]. Lightly grease a #[Baking Dish] with a little @[Extra-Virgin Olive Oil]. Pat the @[Cod Fillets] completely dry with #[Paper Towel] — this helps them bake rather than steam.
- In a small #[Mixing Bowl], whisk together the @[Extra-Virgin Olive Oil], @[Garlic] minced, @[Lemon] zest, @[Smoked Paprika], @[Dried Oregano], @[Fine Sea Salt], @[Black Pepper], and @[Red Pepper Flakes] (if using). Spoon and spread this mixture evenly over the top of each @[Cod Fillet].
- Arrange the seasoned fillets in the prepared #[Baking Dish]. Lay a few @[Lemon] rounds around and on top of the fish. Bake uncovered for ~[15–18 minutes], until the fish is opaque throughout and flakes easily with a fork. Thicker fillets may need the full ~[18 minutes].
- Remove from the #[Oven] and let rest for ~[2 minutes]. Scatter @[Fresh Parsley] over the top and serve immediately with extra @[Lemon] wedges on the side.
