Tender, flaky baked cod with a golden, herb-seasoned crust — ready in under 30 minutes and simple enough for any weeknight. A light drizzle of olive oil and a squeeze of fresh lemon bring the whole dish together beautifully.

  • 1.5 lb cod fillets about 4 fillets, patted dry
  • 3 tbsp extra-virgin olive oil
  • 3 cloves garlic minced
  • 1 whole lemon zested and sliced into rounds
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp fine sea salt
  • 0.25 tsp freshly ground black pepper
  • 0.25 tsp red pepper flakes
  • 2 tbsp fresh parsley finely chopped

Instructions

  1. Preheat your #[Oven] to ![400°F]. Lightly grease a #[Baking Dish] with a little @[Extra-Virgin Olive Oil]. Pat the @[Cod Fillets] completely dry with #[Paper Towel] — this helps them bake rather than steam.
  2. In a small #[Mixing Bowl], whisk together the @[Extra-Virgin Olive Oil], @[Garlic] minced, @[Lemon] zest, @[Smoked Paprika], @[Dried Oregano], @[Fine Sea Salt], @[Black Pepper], and @[Red Pepper Flakes] (if using). Spoon and spread this mixture evenly over the top of each @[Cod Fillet].
  3. Arrange the seasoned fillets in the prepared #[Baking Dish]. Lay a few @[Lemon] rounds around and on top of the fish. Bake uncovered for ~[15–18 minutes], until the fish is opaque throughout and flakes easily with a fork. Thicker fillets may need the full ~[18 minutes].
  4. Remove from the #[Oven] and let rest for ~[2 minutes]. Scatter @[Fresh Parsley] over the top and serve immediately with extra @[Lemon] wedges on the side.
